Description

This Easy Cowboy Caviar is a delightful mix of black beans, sweet corn, vibrant peppers, and zesty dressing. Perfect for entertaining or a quick snack, it brings together freshness and rich flavors in every bite, satisfying all cravings for homemade goodness.


Ingredients

  • 2 (15-ounce) cans black beans, drained and rinsed
  • 1 (15-ounce) can black-eyed peas, drained and rinsed
  • 1 large red bell pepper, seeded and diced
  • 1 large yellow bell pepper, seeded and diced
  • 2 fresh jalapeños, seeded and diced
  • 1 ½ cups frozen corn kernels, thawed and drained
  • ½ cup finely diced red onion
  • ½ cup finely chopped fresh cilantro
  • 1 cup fresh seeded and diced tomato, optional
  • 2 fresh avocados, diced and added just before serving, optional
  • ¼ cup red wine vinegar
  • 2 heaping tablespoons honey
  • 1 fresh lime, juiced
  • 1 tablespoon fine sea salt
  • 2 chipotles in adobo plus 2 teaspoons sauce from the can
  • 1 cup avocado or vegetable oil
  • 1 teaspoon dried oregano
  • 1 teaspoon black pepper

Instructions

  1. Combine black beans, black-eyed peas, red and yellow bell peppers, jalapeños, corn, red onion, cilantro, and tomatoes in a large bowl.
  2. In a blender, add red wine vinegar, honey, lime juice, salt, chipotles, and sauce. Blend until smooth. With the blender on low, stream in the oil until emulsified. Stir in oregano and black pepper, adjusting for taste.
  3. Pour half of the dressing over the mixture in the bowl and mix well. Cover and refrigerate for at least 3 hours before serving.
  4. Before serving, stir the cowboy caviar and adjust dressing if needed. If desired, add diced avocado right before serving. Store any leftover dressing in the refrigerator for later use.
  5. Serve with tortilla chips or as a topping for tacos.

Notes

For added freshness, use ripe avocados
This dish can be made a day in advance to enhance flavors
Adjust the heat level by adding more or fewer jalapeños and chipotles
