- 2 tablespoons butter
- 1 tablespoon olive oil
- 3 yellow onions, thinly sliced
- 1 tablespoon minced fresh thyme leaves
- 2 teaspoons dijon mustard
- 1 tablespoon balsamic vinegar
- 1 1/2 lbs grass-fed 85/15 ground beef
- 1 tablespoon worcestershire
- 1 tablespoon dijon mustard
- 1 tablespoon dehydrated minced onions
- 1 1/2 teaspoons garlic powder
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 4 brioche buns, toasted in butter
- 8 oz double cream brie, cut into slices
- 2 cups arugula
- 1/2 cup mayonnaise
- 1 teaspoon prepared horseradish
- 1 tablespoon dijon mustard
- 1 teaspoon honey
Instructions
- Melt butter and olive oil in a large Dutch oven over medium heat to caramelize onions, then add onions and cover for 10 minutes.
- Remove the lid, lower the heat, and add thyme, salt, and pepper. Cook stirring occasionally until onions are deeply caramelized.
- Chop half of the cooled caramelized onions and mix with ground beef, Worcestershire sauce, dijon mustard, dehydrated onion, garlic powder, salt, and pepper. Form into patties with an indentation in the center.
- In a small bowl, combine mayonnaise, dijon mustard, horseradish, and honey. Season with salt and pepper to make the burger sauce.
- Preheat the grill to 450 F and oil the grates to prevent sticking.
- Grill patties for 3-4 minutes on each side. Remove from grill, rest briefly, and top patties with brie slices.
- Spread burger sauce on toasted buns, place burger patties on top, add the caramelized onions and arugula, and serve immediately.
Notes
Brushing the grill with oil prevents sticking.
Pressing an indentation in the patties helps them cook evenly and prevents puffing.
The brie can be replaced with another cheese if desired.
