Description

Perfect for a quick dinner or a special occasion, this dish features tender lamb chops marinated in olive oil, garlic, and rosemary, complemented by a rich lemon butter sauce that adds a zesty finish.   • 8 lamb chops (rib or loin chops, about 1-inch thick)
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 teaspoons finely chopped fresh rosemary
  • 1 teaspoon fine sea salt
  • 1/2 teaspoon freshly cracked black pepper
  • lemon wedges and flaky sea salt, for serving
  • 4 tablespoons unsalted butter, very soft (not melted)
  • 1 1/2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest

Instructions

  1. Combine olive oil, garlic, rosemary, sea salt, and black pepper in a shallow dish or zip-top bag.
  2. Add lamb chops to the marinade and toss to coat, letting them marinate for 20–30 minutes at room temperature.
  3. In a small bowl, mash softened butter with lemon juice and zest until smooth; set aside.
  4. Preheat outdoor grill to medium-high heat (400–450°F) or heat a grill pan over medium-high heat until very hot.
  5. Place the lamb chops on the grill or grill pan in a single layer, cooking for 3–4 minutes per side for medium-rare doneness.
  6. Transfer the grilled chops to a platter and let them rest for 5 minutes before adding a pat of lemon butter on top, allowing it to melt over them.
  7. Finish with flaky sea salt and serve with lemon wedges.

Notes

For extra flavor, marinate the chops overnight in the refrigerator.
Make sure to bring the lamb chops to room temperature before cooking for even cooking.
Adjust cooking time based on the desired level of doneness.
