Description

Garlic Scape Pesto is a delightful blend of flavors, featuring fresh garlic scapes, basil, and parmesan cheese. This easy-to-make pesto elevates any dish, making it a quick and healthy addition to your meals or a delectable spread for sandwiches.


Ingredients

  • 1 cup garlic scapes, chopped
  • ½ cup fresh basil
  • ⅓ cup parmesan cheese, grated
  • ⅓ cup walnuts or pine nuts, toasted
  • ½ cup olive oil
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Rinse the garlic scapes under cold water and pat dry. Trim off tough ends and chop into 1-2 inch pieces.
  2. Toast walnuts or pine nuts in a dry skillet over medium heat for 3-4 minutes, stirring frequently, until golden and fragrant.
  3. Remove the nuts from heat and let them cool slightly.
  4. In a food processor, combine chopped garlic scapes, fresh basil, toasted nuts, and parmesan cheese. Pulse until finely chopped but not completely smooth.
  5. With the food processor running, slowly add olive oil and blend until the pesto is smooth yet textured.
  6. Add lemon juice, salt, and black pepper. Blend for 10-15 seconds to mix. Adjust seasoning with more salt, lemon juice, or olive oil to taste.
  7. For a smoother consistency, add 1-2 tablespoons of olive oil or water and blend again.
  8. Use immediately or store in an airtight container. Drizzle a thin layer of olive oil on top before sealing to prevent discoloration.

Notes

Use fresh garlic scapes for the best flavor.
This pesto pairs well with pasta, spreads, or as a topping for flatbreads.
Adjust nut type based on preference; walnuts and pine nuts work well.
