Description

This Glazed Lemon Zucchini Bread is a delightful treat that blends the sweetness of sugar with the zesty brightness of lemon and the moistness of zucchini. It’s perfect for breakfast or as a snack, showcasing simple ingredients and easy preparation that anyone can master.


Ingredients

  • 1 cup powdered sugar
  • 4 tsp lemon juice
  • 1 1/2 cups flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 3/4 cup sugar
  • zest from 1 large lemon
  • 2 eggs
  • 1/2 cup oil
  • 1 1/2 tsp lemon juice
  • 1 cup zucchini, grated

Instructions

  1. Preheat the oven to 350 degrees. Spray a bread pan with non-stick spray and set it aside.
  2. In a small bowl, combine the flour, salt, baking soda, and baking powder, whisking them together.
  3. In a larger bowl, mix the sugar and lemon zest. Add eggs, oil, and 1 1/2 tsp lemon juice, blending until smooth.
  4. Gradually incorporate the dry ingredients into the wet mixture until well combined.
  5. Carefully fold in the grated zucchini to the batter.
  6. Pour the batter into the prepared bread pan and bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the bread to rest in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.
  8. For the icing, whisk together the powdered sugar and 4 tsp lemon juice in a small bowl until smooth, then drizzle over the cooled bread.

Notes

For added flavor, you can use freshly grated lemon zest.
Ensure the zucchini is well-drained to avoid excess moisture in the bread.
This bread can be stored in an airtight container for up to 3 days.
