Description

Ingredients

  • 1/4 cup olive oil
  • 1/3 cup fresh lemon juice
  • 2 tablespoons lemon zest
  • 1 small shallot diced fine
  • 4 garlic cloves
  • 1 tablespoon dijon mustard
  • 1 tablespoon dried oregano
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 4 pounds bone-in skin on chicken thighs

Instructions

  1. In a large bowl, mix the marinade ingredients.
  2. Add the chicken thighs, tossing to ensure they are well coated. Cover and refrigerate for at least 30 minutes or up to 24 hours for best results.
  3. Preheat your oven to 400°F (200°C).
  4. Place the marinated chicken in a baking dish. Pour the marinade over the chicken. Cover the dish and bake for 45 to 55 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  5. After baking, uncover the dish and switch on the broiler. Broil the chicken for an additional 2 to 3 minutes, watching closely to prevent burning. This step will help crisp the skin.

Notes

For maximum flavor, marinate the chicken overnight.
Serve with a fresh Greek salad or grilled vegetables for a complete meal.
