- 1/3 cup fresh lemon juice

- 1 small shallot diced fine
- 4 garlic cloves
- 1 tablespoon dijon mustard
- 1 tablespoon dried oregano

- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- 1/4 teaspoon black pepper
- 4 pounds bone-in skin on chicken thighs
Instructions
- In a large bowl, mix the marinade ingredients.
- Add the chicken thighs, tossing to ensure they are well coated. Cover and refrigerate for at least 30 minutes or up to 24 hours for best results.
- Preheat your oven to 400°F (200°C).
- Place the marinated chicken in a baking dish. Pour the marinade over the chicken. Cover the dish and bake for 45 to 55 minutes until the chicken reaches an internal temperature of 165°F (74°C).
- After baking, uncover the dish and switch on the broiler. Broil the chicken for an additional 2 to 3 minutes, watching closely to prevent burning. This step will help crisp the skin.
