Description

This Greek Yogurt Zucchini Bread combines the goodness of zucchini with the creaminess of Greek yogurt, resulting in a moist and flavorful loaf. It’s perfect for dessert, snacking, or breakfast!


Ingredients

  • 1/3 cup avocado oil, olive oil, or melted coconut oil
  • 1/2 cup honey
  • 1 large egg, at room temperature
  • 1/2 cup plain greek yogurt, at room temperature
  • 1 and 1/2 teaspoons pure vanilla extract
  • 1 and 1/2 cups all-purpose flour (spooned & leveled)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup shredded zucchini
  • 2 teaspoons orange zest (optional)
  • 3/4 cup chopped walnuts, raisins/dried cranberries, or chocolate chips (optional)
  • coarse sugar, for sprinkling (optional)

Instructions

  1. Preheat your oven to 350°F (177°C). Grease an 8.5×4.5-inch loaf pan with butter or nonstick spray.
  2. In a medium bowl, whisk together the oil, honey, egg, yogurt, and vanilla until combined.
  3. In a large bowl, mix the flour, baking powder, baking soda, salt, and cinnamon. Combine the wet ingredients with the dry ingredients, mixing gently to avoid overmixing. The batter will be thick. Fold in the shredded zucchini, orange zest, and any optional add-ins.
  4. Spread the batter evenly in the prepared loaf pan, sprinkling lightly with coarse sugar if desired before baking.
  5. Bake for 50–55 minutes, covering with foil halfway to prevent excessive browning. Check with a toothpick to see if it comes out clean before removing from the oven.
  6. Let the bread cool in the pan for an hour before transferring it to a cooling rack. Allow it to cool completely before slicing and serving.
  7. Store leftovers at room temperature for up to 4 days or in the refrigerator for up to 1 week.

Notes

If you want an extra pop of flavor, add the optional orange zest.
You can substitute the add-ins with your favorite mix-ins like chocolate chips or nuts.
Make sure to store the bread properly to keep it moist.
