Description

This Grilled Asparagus & Zucchini Salad combines vibrant grilled vegetables, fresh herbs, and feta cheese for a mouthwatering, healthy meal that’s easy to prepare and perfect for any occasion.


Ingredients

  • 1 lb asparagus, ends trimmed
  • 2 medium zucchini, ends trimmed, cut in half lengthwise and cut into spears
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 small shallot, minced
  • 1 teaspoon dijon mustard
  • 1 teaspoon honey
  • 1 garlic clove, minced
  • kosher salt and black pepper, to taste
  • 4 cups chopped butter lettuce
  • 3 green onions, sliced
  • 1/3 cup crumbled feta cheese
  • 1/3 cup chopped pistachios
  • 1/4 cup chopped dill
  • 1/4 cup chopped basil
  • lemon zest, for garnish

Instructions

  1. In a large bowl, combine asparagus and zucchini. Drizzle with olive oil and season with salt and pepper. Toss until evenly coated.
  2. Preheat a grill or grill pan over medium-high heat. Place vegetables on the grill, cut side of zucchini down. Grill asparagus for 6-8 minutes until charred, turning once. Grill zucchini for 3-4 minutes per side until tender with grill marks.
  3. Remove grilled vegetables and let them cool to room temperature before cutting into 1-inch pieces.
  4. Prepare the dressing by whisking together remaining olive oil, lemon juice, shallot, Dijon mustard, honey, minced garlic, and seasoning with salt and pepper in a small bowl.
  5. In a large serving bowl, mix together the lettuce, grilled asparagus, zucchini, green onions, feta cheese, pistachios, dill, and basil. Drizzle with dressing and toss. Garnish with lemon zest before serving.

Notes

For extra flavor, use freshly squeezed lemon juice.
Feel free to substitute grilled vegetables according to your taste or availability.
This salad can be served warm or cold.
