Description

This grilled carrots recipe boasts irresistible flavors with a blend of cinnamon and chipotle. Easy to prepare, it’s perfect for a quick and healthy meal.


Ingredients

  • 2 pounds carrots (about 1216 medium carrots, about 1-inch in diameter)
  • 1 1/2 tablespoons coconut oil, melted
  • 1 teaspoon cinnamon
  • 1 teaspoon chipotle paste
  • 1/2 teaspoon chili powder
  • salt, to taste
  • for topping – fresh cilantro

Instructions

  1. Preheat the grill to medium-high heat.
  2. Wash and peel the carrots.
  3. In a small bowl, mix coconut oil, cinnamon, chipotle paste, chili powder, and salt. Rub the mixture evenly onto the carrots.
  4. Place the carrots on the hot grill over indirect heat. Grill for 20-25 minutes, flipping and rotating every 7-8 minutes, until slightly soft with a slight firmness inside.
  5. Transfer the grilled carrots to a serving platter, top with cilantro if desired, and serve.

Notes

Adjust the seasoning with more salt if needed.
For extra spice, increase the chipotle paste.
Grilling time may vary depending on carrot size.
