- 2 pounds carrots (about 12–16 medium carrots, about 1-inch in diameter)
- 1 1/2 tablespoons coconut oil, melted
- 1 teaspoon cinnamon
- 1 teaspoon chipotle paste
- 1/2 teaspoon chili powder
- salt, to taste
- for topping – fresh cilantro
Instructions
- Preheat the grill to medium-high heat.
- Wash and peel the carrots.
- In a small bowl, mix coconut oil, cinnamon, chipotle paste, chili powder, and salt. Rub the mixture evenly onto the carrots.
- Place the carrots on the hot grill over indirect heat. Grill for 20-25 minutes, flipping and rotating every 7-8 minutes, until slightly soft with a slight firmness inside.
- Transfer the grilled carrots to a serving platter, top with cilantro if desired, and serve.
Notes
Adjust the seasoning with more salt if needed.
For extra spice, increase the chipotle paste.
