Description

These Grilled Chicken Sandwiches boast irresistible flavors with juicy grilled chicken and creamy garlic aioli. Perfect for a quick lunch or summer BBQ, this recipe is easy to prepare and sure to please everyone!


Ingredients

  • 4 boneless skinless chicken breasts (about 68 oz each)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 ½ teaspoons salt
  • Black pepper to taste, optional
  • Avocado oil or other high-heat oil
  • 1 cup mayonnaise
  • 3 cloves garlic, minced
  • 1 tablespoon dijon mustard or siracha for spice
  • 1 tablespoon lemon juice
  • 4 brioche buns or ciabatta rolls
  • 2 avocados, sliced
  • 1 large tomato, sliced
  • Lettuce leaves or arugula
  • 8 slices crispy bacon
  • ½ red onion, thinly sliced
  • Dill pickles
  • Hot honey for drizzling

Instructions

  1. Mix all ingredients for garlic aioli in a small bowl until combined. Cover and set aside.
  2. Dry chicken with paper towels. Preheat grill to medium-high heat. Combine seasonings in a bowl and rub chicken breasts with high-heat oil and seasonings on both sides.
  3. Grill chicken for 4-7 minutes per side until cooked through at an internal temperature of 165°F (74°C). Let rest before assembling.
  4. Slice brioche buns and lightly toast on the grill while the chicken is resting.
  5. Spread garlic aioli on the bottom half of each toasted bun and place grilled chicken on top.
  6. Layer avocado slices, tomato slices, and lettuce on the chicken, adding crispy bacon slices and pickles if desired.
  7. Drizzle hot honey over each sandwich according to spice preference.
  8. Top each sandwich with the other half of the bun.
  9. Serve immediately while buns are warm and flavors are fresh.

Notes

For a spicier version, mix sriracha into the garlic aioli.
Ensure the chicken rests sufficiently before slicing to retain moisture.
