- 4 boneless skinless chicken breasts (about 6–8 oz each)
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 ½ teaspoons salt
- Black pepper to taste, optional
- Avocado oil or other high-heat oil
- 1 cup mayonnaise
- 3 cloves garlic, minced
- 1 tablespoon dijon mustard or siracha for spice
- 1 tablespoon lemon juice
- 4 brioche buns or ciabatta rolls
- 2 avocados, sliced
- 1 large tomato, sliced
- Lettuce leaves or arugula
- 8 slices crispy bacon
- ½ red onion, thinly sliced
- Dill pickles
- Hot honey for drizzling
Instructions
- Mix all ingredients for garlic aioli in a small bowl until combined. Cover and set aside.
- Dry chicken with paper towels. Preheat grill to medium-high heat. Combine seasonings in a bowl and rub chicken breasts with high-heat oil and seasonings on both sides.
- Grill chicken for 4-7 minutes per side until cooked through at an internal temperature of 165°F (74°C). Let rest before assembling.
- Slice brioche buns and lightly toast on the grill while the chicken is resting.
- Spread garlic aioli on the bottom half of each toasted bun and place grilled chicken on top.
- Layer avocado slices, tomato slices, and lettuce on the chicken, adding crispy bacon slices and pickles if desired.
- Drizzle hot honey over each sandwich according to spice preference.
- Top each sandwich with the other half of the bun.
- Serve immediately while buns are warm and flavors are fresh.
Notes
For a spicier version, mix sriracha into the garlic aioli.
