This Grilled Corn Salad combines the sweetness of grilled corn, juicy tomatoes, and vibrant herbs, making it a delightful addition to any meal. It’s easy to prepare and packed with fresh flavors, perfect for a quick dinner or a healthy side dish at summer gatherings.

- 4 ears of corn, shucked and silks removed
- ¼ cup olive oil
- 1 cup cherry or grape tomatoes, quartered
- 1 english cucumber, sliced and quartered
- ½ medium red onion, diced
- ¼ cup chopped fresh herbs
- 2 tablespoons apple cider vinegar
- ½ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
- optional: crumbled feta
Instructions
- Preheat your grill or grill pan to medium-high heat. Brush the corn with 2 tablespoons of olive oil.
- Grill the corn for 8 to 10 minutes, rotating occasionally for even charring, then remove from the grill and let cool.
- Once cool, shave the kernels off the corn using a large knife.
- In a bowl, combine the corn kernels, quartered tomatoes, cucumber, diced red onion, and herbs. Drizzle with the remaining olive oil, apple cider vinegar, salt, and pepper, and stir to combine.
- Optionally, top with crumbled feta before serving.
Notes
For extra flavor, add your favorite grilled vegetables.
This salad can be made a few hours in advance; just mix in the feta right before serving.
Feel free to customize with whatever fresh herbs you have on hand.
