  • 1.5 teaspoons baking powder
  • ¼ teaspoon salt
  • 2 teaspoons cinnamon

  • 2 cups diced granny smith apples, peeled, divided
  • ¼ cup avocado oil
  • ½ cup packed light brown sugar
  • 1 cup cottage cheese, 4%, blended smooth
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • ¼ cup powdered sugar
  • 1 tablespoon milk

Instructions

  1. Preheat your oven to 425°F. Line 6 wells of a 12-cup muffin tin with paper liners, skipping one well between each.
  2. In a large bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg until well mixed.
  3. Add 1.5 cups of diced Granny Smith apples to the dry mixture and toss to coat evenly.
  4. In a separate bowl, whisk together the avocado oil, brown sugar, blended cottage cheese, eggs, and vanilla until smooth.
  5. Pour the wet mixture into the dry ingredients and fold until no streaks of flour remain. Avoid overmixing.
  6. Divide the batter evenly among the 6 muffin liners, filling them to the top.
  7. Mix the topping brown sugar and cinnamon in a small bowl, and sprinkle it over the muffins. Add the remaining diced apples on top.
  8. Bake at 425°F for 5 minutes. Then reduce the temperature to 350°F and bake for an additional 13-18 minutes until a toothpick comes out clean.
  9. Cool the muffins for 5-10 minutes in the tin before transferring them to a wire rack. Repeat with the remaining batter if needed.
  10. For an added touch, whisk the powdered sugar and milk to drizzle over the cooled muffins.

Notes

These muffins can be stored in an airtight container for up to 3 days.
Feel free to substitute other apples if Granny Smith is not available.
For added sweetness, consider adding raisins or nuts to the batter.
