Ingredients

  • 1 cup unsweetened cinnamon applesauce
  • 3/4 cup milk
  • 2 tablespoons maple syrup
  • 2 teaspoons vanilla extract
  • 2 1/2 cups rolled oats
  • 1 1/2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups diced apple

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with silicone liners or grease it well.
  2. In a large mixing bowl, combine the wet ingredients: applesauce, milk, maple syrup, and vanilla extract. Mix until smooth.
  3. Add the dry ingredients—rolled oats, cinnamon, nutmeg, baking powder, and salt—to the wet mixture, and stir well until fully combined. Carefully fold in the diced apples.
  4. Using a large cookie scoop, portion out the mixture into the muffin tin, filling each cup. The batter will be quite wet, so mold the muffins as needed.
  5. Bake in the preheated oven for 25-28 minutes or until the tops are golden brown. Remove and let cool. Sprinkle with cinnamon if desired, then serve and enjoy!

Notes

You can substitute the applesauce for any unsweetened fruit puree you prefer.
For a sweeter muffin, add an extra tablespoon of maple syrup if desired.
