- 2 large eggs
- 1 cup unsweetened applesauce
- ½ cup almond milk
- ½ cup maple syrup
- 2 tablespoons melted coconut oil or avocado oil
- 1 teaspoon vanilla
Instructions
- Preheat your oven to 350°F and line a muffin tin with paper liners or lightly grease the cups.
- In a medium bowl, combine oat flour, rolled oats, baking powder, baking soda, cinnamon, and salt. Stir until mixed.
- In a large bowl, whisk together eggs, applesauce, maple syrup, almond milk, vanilla extract, and oil until smooth.
- Add the dry ingredients to the wet mixture and stir until just blended, being careful not to overmix.
- Spoon the batter evenly into the muffin cups. Sprinkle additional rolled oats on top.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
