Lentil Bruschetta is a delicious, easy-to-make dish featuring creamy lentils, feta cheese, and fresh parsley. Perfect for a healthy snack or appetizer!

- 1 ½ cup cooked green lentils, drained
- ¼ cup crumbled feta
- 3 tablespoons chopped parsley
- 2 tablespoons chopped onion
- 1 tablespoon extra virgin olive oil, plus more for drizzling
- ½ tablespoon lemon juice
- ¼ teaspoon salt, or to taste
- ⅛ teaspoon pepper, or to taste
- 6 slices of bread (ciabatta or artisanal bread)
Instructions
- Place the cooked lentils in a salad bowl and mash half of them using a fork or the back of a spoon.
- Add crumbled feta, parsley, onion, olive oil, lemon juice, salt, and pepper to the mashed lentils and mix well. Taste and adjust seasoning as desired.
- Preheat your oven to 200°C (400°F). Arrange the sliced bread on a baking tray and toast in the oven for about 5 minutes until golden and slightly crispy, keeping an eye on it to prevent burning.
- Once the bread is toasted, optionally rub each slice with a garlic clove before topping with the lentil mixture. Serve at room temperature.
Notes
Toast the bread just before serving for the best texture.
You can use a toaster or skillet if preferred.
