Description

Lentil Bruschetta is a delicious, easy-to-make dish featuring creamy lentils, feta cheese, and fresh parsley. Perfect for a healthy snack or appetizer!


Ingredients

  • 1 ½ cup cooked green lentils, drained
  • ¼ cup crumbled feta
  • 3 tablespoons chopped parsley
  • 2 tablespoons chopped onion
  • 1 tablespoon extra virgin olive oil, plus more for drizzling
  • ½ tablespoon lemon juice
  • ¼ teaspoon salt, or to taste
  • ⅛ teaspoon pepper, or to taste
  • 6 slices of bread (ciabatta or artisanal bread)

Instructions

  1. Place the cooked lentils in a salad bowl and mash half of them using a fork or the back of a spoon.
  2. Add crumbled feta, parsley, onion, olive oil, lemon juice, salt, and pepper to the mashed lentils and mix well. Taste and adjust seasoning as desired.
  3. Preheat your oven to 200°C (400°F). Arrange the sliced bread on a baking tray and toast in the oven for about 5 minutes until golden and slightly crispy, keeping an eye on it to prevent burning.
  4. Once the bread is toasted, optionally rub each slice with a garlic clove before topping with the lentil mixture. Serve at room temperature.

Notes

Toast the bread just before serving for the best texture.
You can use a toaster or skillet if preferred.
Feel free to adjust the seasoning in the lentil dip to suit your taste.
