- 2 tablespoons cornstarch
- 2 teaspoons baking powder
- 1–¾ sticks butter (softened at room temperature)
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- 4 large eggs (at room temperature)
- ⅓ cup heavy cream
- 3 tablespoons unsweetened cocoa powder
- 1 tablespoon granulated sugar
- 2 tablespoons heavy cream
- powdered sugar or chocolate ganache
Instructions
- Preheat your oven to 350°F and line a 9×5-inch loaf pan with parchment paper.
- In a small bowl, whisk together flour, cornstarch, and baking powder. Set aside.
- Using a hand mixer, beat the softened butter until creamy. Add granulated sugar, vanilla extract, and salt, beating until pale and fluffy.
- Incorporate the eggs one at a time, beating well after each addition.
- Gradually add the flour mixture and heavy cream alternately until the batter is smooth.
- Pour about ⅔ of the batter into the prepared pan. Mix the remaining batter with cocoa powder, extra sugar, and heavy cream. Spread this chocolate batter over the vanilla layer and swirl together with a knife.
- Bake for 55–60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar or top with chocolate ganache before serving.
