- 1 cup diced chicken
- 2 cups fresh spinach
- ¼ cup sun dried tomatoes, diced
- 2 green onions, thinly sliced
- ½ cup shredded mozzarella cheese
- ¼ cup grated parmesan cheese
- 6 large eggs
- ½ cup heavy cream
- ½ cup milk
- ¼ tsp salt
- ¼ tsp ground black pepper
Instructions
- Preheat the oven to 400˚F. Pre-bake the pie crust by placing parchment inside and filling it with dried beans. Bake for 12-15 minutes or until golden brown. Let it cool and reduce the oven temperature to 350˚F.
- In a medium bowl, whisk together the eggs, heavy cream, milk, salt, and pepper until fully combined to create the custard.
- Chop the spinach roughly and place it in the bottom of the pie crust. Layer the chicken, sun-dried tomatoes, green onions, and cheeses atop the spinach.
- Pour the egg mixture evenly over the layered ingredients in the quiche.
- Place the quiche on a baking sheet and bake for 45-55 minutes or until the center is just set. Let sit for 20 minutes before serving warm.
