Description

These Meal Prep Breakfast Burritos are packed with flavor and simplicity. With savory eggs, hearty meat, and fresh vegetables wrapped in tortillas, they make the perfect quick meal for busy days.


Ingredients

Scale
  • 1 lb meat, chicken sausage, bacon, ground beef, etc.
  • 2 cups veggies, tomatoes, zucchini, bell pepper, red onion, mushrooms
  • Pinch salt
  • 12 eggs
  • 1 cup cottage cheese
  • 10 burrito-sized tortillas
  • 1 cup cheddar cheese, shredded

Instructions

  1. Cook the meat in a medium skillet over medium heat until done, then remove with a slotted spoon to a bowl.
  2. In the same skillet, add chopped vegetables and a pinch of salt, sautéing until soft, about 3-5 minutes.
  3. In a large bowl, whisk together eggs and cottage cheese, adding a bit of salt and pepper. Pour this into the skillet with the vegetables and scramble the eggs.
  4. On a tortilla, place ¾ cup of the egg mixture, 2 tablespoons of meat, and 2 tablespoons of shredded cheese.
  5. Fold the sides of the tortilla and roll it up to form a burrito. Repeat until all ingredients are used up.
  6. If preparing in advance, wrap each burrito in foil and freeze to prevent sticking. They can be grouped in a plastic bag or container and stored for up to 2 months.
  7. Alternatively, store wrapped burritos in the fridge for up to 1 week.
  8. To reheat, microwave until heated through or bake in the oven at 375°F for 15-20 minutes.

Notes

Freezing the burritos allows for easy meal prep; just unwrap and reheat when needed.
