  • 200 g granulated sugar (1 cup)
  • 60 g bisquick (½ cup)
  • 2 teaspoon ground cinnamon
  • 1 ½ teaspoon baking soda

  • 113 g unsalted butter (½ cup) melted, slightly cooled
  • 50 g avocado oil (¼ cup) or other neutral oil
  • 2 large eggs lightly whisked
  • 2 teaspoon pure vanilla extract
  • 325 g mashed ripe bananas (1 ½ cup or about 3 medium bananas)

Instructions

  1. Preheat your oven to 350℉ and position the oven rack in the center. Line a 9×4-inch loaf pan with parchment paper and brush it with butter.
  2. In a large mixing bowl, combine mochiko, sugar, Bisquick, baking soda, cinnamon, and salt. Stir in the melted butter and oil until the mixture is combined. Then add the eggs and vanilla extract, mixing well.
  3. Incorporate the mashed bananas into the batter, ensuring they are evenly distributed. Pour the mixture into the prepared loaf pan and bake for about one hour or until a toothpick inserted comes out clean.
