Description

Morir Soñando Chia Pudding is a delightful blend of flavors, featuring creamy yogurt, fresh orange juice, and chia seeds for a healthy and satisfying dessert. Ingredients

  • 1/2 cup high-protein plant-based yogurt or skyr, 135g
  • 2 tsp orange zest
  • 1/2 cup freshly squeezed orange juice (about 12 navel oranges)
  • juice of 1 lime or 2 tbsp extra orange juice
  • 2 tbsp agave syrup
  • 1 tsp dominican vanilla or vanilla paste/extract
  • 1/4 tsp kosher salt
  • 3/4 cup non-dairy evaporated milk
  • 1/3 cup chia seeds, 57g
  • 3 tbsp rolled oats, 16g
  • 23 pitted medjool dates, 40g
  • 2 tbsp coconut flakes, 8g
  • 2 tbsp raw cashews, 16g
  • 1 tsp orange zest
  • 1/2 tsp dominican vanilla or vanilla paste/extract
  • 1/4 tsp kosher salt

Instructions

  1. Blend yogurt, orange zest, orange juice, and lime in a blender until smooth.
  2. Add agave, vanilla, and salt; blend well. Gradually mix in evaporated milk until fully combined. Adjust sweetness as needed.
  3. Stir in chia seeds until evenly mixed. Cover and refrigerate for 10 minutes to allow chia seeds to swell. Stir again and refrigerate overnight.
  4. In a food processor, blend oats, medjool dates, coconut flakes, cashews, orange zest, vanilla, and salt until crumbly. Store in fridge until needed.
  5. Serve the chia pudding in bowls or jars, topping with the crumble mixture.

Notes

Allow chia pudding to sit overnight for the best texture.
