- ½ cup boiling water
- ½ cup cold water
- 1 (8-ounce tub) Cool Whip, thawed
- 1½ cups diced seedless watermelon, blotted dry
- 1 (9-inch) graham cracker pie crust
- Watermelon slices, mint leaves (optional decoration)
Instructions
- In a medium bowl, combine the watermelon Jell-O and boiling water, stirring for a minute until fully dissolved.
- Pour in cold water and stir well. Allow to cool for 10 to 15 minutes without letting it set.
- After cooling, gently fold in the Cool Whip for a smooth, creamy mixture. Then, incorporate the diced watermelon.
- Transfer the filling into the graham cracker crust and smooth the top.
- Refrigerate for at least 4 hours, until set and firm throughout.
- Slice and serve chilled, optionally topping with Cool Whip, watermelon cubes, or mint leaves.
- Store covered in the fridge for up to 3 days, but do not freeze.

Ensure the watermelon is blotted dry to avoid excess moisture in the pie.
