Description

Enjoy a delightful One Pot Spinach Artichoke Chicken Orzo that combines tender chicken, fresh spinach, and artichokes in a creamy sauce, making dinner easy and satisfying!


Ingredients

  • 2 tablespoons olive oil
  • pounds chicken breast
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 16 ounces orzo
  • 4 cups chicken broth
  • 1½ cup heavy cream
  • 4 ounces cream cheese
  • 1 teaspoon salt
  • ¼ cup parmesan cheese
  • 3 cloves garlic, minced
  • 1 can quartered artichoke hearts, (14 ounce) drained
  • 8 ounces fresh spinach

Instructions

  1. Cut the chicken into 1 inch cubes and season it with salt, pepper, and garlic powder.
  2. Heat a large skillet over medium high heat, add the olive oil, and once hot, spread the chicken in a single layer in the skillet. Cook for 3-4 minutes, then stir and cook for another 3-4 minutes.
  3. Add orzo to the skillet, followed by the chicken broth and heavy cream. Stir and bring to a simmer, then cook for about 10-12 minutes or until the orzo is tender, stirring occasionally to scrape the bottom of the pan.
  4. Stir in salt, cream cheese, parmesan cheese, artichoke hearts, and fresh spinach. Continue cooking and stirring until the spinach is wilted and the cheese is fully incorporated.
  5. Garnish with additional parmesan and fresh cracked pepper.

Notes

For a quicker meal, prepare the ingredients in advance.
Feel free to substitute chicken with shrimp for a different protein option.
Ensure to stir frequently to prevent the orzo from sticking.
