- 2 tablespoons olive oil
- 1½ pounds chicken breast
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon garlic powder
- 16 ounces orzo
- 4 cups chicken broth
- 1½ cup heavy cream
- 4 ounces cream cheese
- 1 teaspoon salt
- ¼ cup parmesan cheese
- 3 cloves garlic, minced
- 1 can quartered artichoke hearts, (14 ounce) drained
- 8 ounces fresh spinach
Instructions
- Cut the chicken into 1 inch cubes and season it with salt, pepper, and garlic powder.
- Heat a large skillet over medium high heat, add the olive oil, and once hot, spread the chicken in a single layer in the skillet. Cook for 3-4 minutes, then stir and cook for another 3-4 minutes.
- Add orzo to the skillet, followed by the chicken broth and heavy cream. Stir and bring to a simmer, then cook for about 10-12 minutes or until the orzo is tender, stirring occasionally to scrape the bottom of the pan.
- Stir in salt, cream cheese, parmesan cheese, artichoke hearts, and fresh spinach. Continue cooking and stirring until the spinach is wilted and the cheese is fully incorporated.
- Garnish with additional parmesan and fresh cracked pepper.

For a quicker meal, prepare the ingredients in advance.
Feel free to substitute chicken with shrimp for a different protein option.
