Description

This Parmesan Crusted Chicken offers an irresistible blend of flavors with juicy chicken breasts topped with a cheesy, crispy crust. Perfect for a quick and satisfying dinner!


Ingredients

  • 2 boneless skinless chicken breasts cut in half lengthwise
  • ¾ cup grated parmesan cheese divided
  • ½ cup shredded provolone cheese
  • 6 tablespoons unsalted butter melted and divided
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt or to taste
  • ½ teaspoon pepper or to taste
  • ½ cup panko breadcrumbs

Instructions

  1. Preheat a grill pan over medium-high heat.
  2. In a small bowl, combine 4 tablespoons melted butter, garlic powder, onion powder, salt, and pepper. Brush this mixture over the chicken breasts.
  3. Cook the chicken on the grill pan for 3-4 minutes, then flip it.
  4. In a medium bowl, mix together ½ cup Parmesan and provolone cheese, and set aside.
  5. Top each chicken breast with the cheese mixture and cook until the internal temperature reaches 165°F, about 3-4 more minutes.
  6. Transfer the chicken to a foil-lined baking sheet.
  7. Preheat the oven broiler on high.
  8. Combine the remaining ¼ cup Parmesan with panko breadcrumbs and 2 tablespoons melted butter, and sprinkle this mixture on top of the chicken.
  9. Broil for 1-2 minutes until the breadcrumbs are golden brown, watching closely to prevent burning.
  10. Allow the chicken to rest for 5 minutes before serving.

Notes

For added flavor, marinate chicken in the butter mixture for 30 minutes before grilling.
Make sure to keep an eye on the chicken under the broiler to prevent burning.
Serve with a side of vegetables or salad for a complete meal.
