Description

  • 4 cups sliced peaches
  • 1 1/2 cups blueberries
  • 1 tablespoon fresh lemon juice
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1 teaspoon vanilla extract
  • 6 tablespoons unsalted butter
  • 1 cup white whole wheat flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 3/4 cup milk

Instructions

  1. In a saucepan, combine peaches, blueberries, sugar, lemon juice, cinnamon, ginger, and a pinch of salt. Cook on medium heat for 2-3 minutes until sugar dissolves, stirring often.
  2. Remove from heat and stir in vanilla. Set aside.
  3. Cut butter into pieces and place in a 9×13 baking dish. Put the dish in the oven as it preheats to 350°F to melt the butter.
  4. Meanwhile, prepare the batter by mixing flour, sugar, baking powder, salt, cinnamon, and ginger in a bowl. Gradually add milk, stirring until just combined.
  5. Once the butter is melted, pour the batter over the melted butter, smoothing it into an even layer.
  6. Spoon the fruit filling and juices over the batter. If desired, sprinkle turbinado sugar on top before returning to the oven.
  7. Bake at 350°F for 35-40 minutes or until the top is golden brown and crisp. Allow to cool for 5 minutes before serving, best enjoyed with vanilla ice cream.

Notes

Feel free to substitute other berries in the recipe for a different flavor twist.
For extra crunch, add chopped nuts to the topping before baking.
Ensure the butter is completely melted for a nicely textured cobbler.
