- 2/3 cup white granulated sugar
- 2 tablespoons corn starch
- 1 teaspoon vanilla
- ½ teaspoon cinnamon
- ¼ teaspoon salt
- ¾ cup dark brown sugar, packed
- ¾ cup white all-purpose flour
- 2/3 cup old fashioned rolled oats
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- ½ stick salted butter, cut into very small pieces
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- Grease a 9-inch baking dish with non-stick spray and set aside.
- Place sliced peaches in a large bowl and add sugar. Toss to coat and set aside.
- In a medium bowl, combine brown sugar, flour, rolled oats, cinnamon, and nutmeg.
- Add diced butter to the dry mixture, using a pastry blender or large fork to create coarse crumbs.
- Return to the bowl of peaches, adding vanilla, cornstarch, cinnamon, and salt. Toss to coat thoroughly.
- Pour the peach mixture into the prepared baking dish.
- Spread the crumb topping evenly over the peaches.
- Bake for 45-50 minutes, until topping is golden brown and juices are bubbling around the edges.
- Remove from oven and let rest for 15 minutes before serving.
- Optional: Serve with vanilla ice cream and a sprig of mint.
