- 2 cups ripe peaches peeled and diced (about 3–4 peaches)
- 3 tablespoons granulated sugar
- 1 teaspoon lemon juice
- Pinch of salt
- 2 large eggs
- 4 large egg yolks
- 1 1/4 cups granulated sugar
- 2 cups heavy whipping cream
- 2 cups half and half
- 2 tablespoons pure vanilla extract
- 1 tablespoon bourbon optional
Instructions
- In a medium-sized bowl, combine diced peaches, sugar, lemon juice, and salt. Toss to mix and allow to sit for 20-30 minutes until juicy.
- Transfer half of the peaches and their juices to a small saucepan. Simmer over medium heat for 5-7 minutes until softened. Remove from heat and let cool, then pulse in a blender or food processor until mostly smooth with some texture. Set aside to cool down.
- Refrigerate the remaining fresh peaches to fold in later.
Notes
Using fresh, ripe peaches will enhance the flavor of the ice cream.
For a richer taste, include the bourbon to the mixture if desired.
Chill the mixture thoroughly before churning for better texture.
