- 1 lb ripe peaches, cubed
- 2/3 cup light brown sugar, packed
- 1/2 tsp ground cinnamon
- 1 tbsp lemon juice
- 1 tbsp cornstarch
Instructions
- Cube the peaches. If frozen, thaw them first. If fresh, peel the peaches before cubing.
- In a medium saucepan over medium heat, combine the peaches, brown sugar, cinnamon, lemon juice, and cornstarch. Mix well.
- Cook until the peach juice separates and the mixture comes to a simmer.
- Continue cooking for 10 minutes, stirring occasionally until the mixture thickens. Use a potato masher to lightly mash about 20% of the peaches. Cook for an additional minute and then remove from heat. Cool completely before using.
Notes
For a thicker filling, adjust the cornstarch based on your preference.
This filling can be stored in the refrigerator for up to a week.
