- 6 peaches, diced into 2” cubes
- ½ cup sugar
- 1 lemon, juiced
- ½ lemon, zest
Instructions
- Combine peaches, sugar, lemon juice, and lemon zest in a large saucepan.
- Bring the mixture to a rapid boil and continue boiling for 20 minutes, stirring occasionally. Use a wooden spoon to help break down the peaches until the mixture thickens and clings to the back of a spoon.
- Transfer the preserves to a large glass jar or several smaller jars, seal, and store in the refrigerator for up to 2 months.
