  • 14 oz sweetened condensed milk
  • 1 tablespoon vanilla extract
  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter
  • 1 cup light brown sugar
  • 1/2 cup heavy cream
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 8.8 oz package biscoff cookies
  • 12 fresh peaches, thinly sliced (optional, for layering)

Instructions

  1. In a saucepan over medium heat, combine fresh peaches, granulated sugar, brown sugar, lemon juice, vanilla extract, cinnamon, and nutmeg.
  2. Cook for 5-7 minutes until the peaches are softened and starting to release their juices.
  3. In a small bowl, whisk together cornstarch and water, then stir into the peach mixture.
  4. Continue to cook for an additional 2-3 minutes until the filling has thickened to a cobbler-like consistency.
  5. Remove from heat and allow the mixture to cool to room temperature.

Notes

For a richer flavor, use ripe, fresh peaches when in season.
