Description

These Plum Bars are a delightful treat featuring ripe plums, a buttery crust, and a hint of vanilla. Perfect for an easy dessert or snack, they combine simple ingredients for a mouthwatering outcome that’s sure to please everyone.


Ingredients

  • 1 ¾ cup all purpose flour
  • ⅔ cup sugar
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup butter, cold
  • 1 egg, whisked
  • 2 tbsp milk
  • 4 plums, diced small
  • ¼ cup sugar
  • 2 tbsp all purpose flour
  • ½ tsp vanilla extract

Instructions

  1. Preheat the oven to 400° F and line an 8×8 baking dish with parchment paper.
  2. In a large bowl, mix together the flour, sugar, baking powder, and salt. Grate in the cold butter using a cheese grater.
  3. Combine the mixture with your hands until the butter resembles small pebbles, then stir in the whisked egg and milk.
  4. In a separate bowl, combine the diced plums with the additional sugar, flour, and vanilla extract.
  5. Press ⅔ of the crust mixture into the prepared baking pan for the base.
  6. Spread the plum mixture evenly over the crust in the pan before sprinkling the remaining crust mixture on top.
  7. Bake for 30-32 minutes until the edges are golden brown. Allow the bars to cool before slicing and serving.

Notes

Feel free to substitute other fruits if plums are unavailable.
For added flavor, sprinkle a little cinnamon over the plum mixture before baking.
Serve with a dollop of whipped cream or ice cream for an extra treat.
