Description

These delightful Pumpkin Deviled Eggs combine rich flavors and a fun presentation, making them perfect for gatherings. With simple ingredients like pumpkin puree and smoked paprika, they are both easy to prepare and irresistibly delicious.


Ingredients

  • 12 eggs
  • 5 tablespoons pumpkin puree
  • 3 tablespoons mayonnaise
  • 1 tablespoon dijon mustard
  • 2 teaspoons lemon juice
  • 1 teaspoon smoked paprika
  • pinch of salt
  • pinch of pepper
  • fresh chives
  • fresh parsley

Instructions

  1. Fill a large pot with cold water and add the eggs. Cover with a lid and bring to a boil. Once boiling, turn off the heat and let the eggs sit for 12 to 15 minutes.
  2. Prepare a large bowl filled with ice water. Transfer the eggs from the hot water to the ice water and let them cool for 2 to 3 minutes.
  3. Peel the cooled eggs and slice them in half. Arrange the whites on a tray or cutting board.
  4. Transfer the yolks to a mixing bowl, leaving the egg whites on the tray.
  5. Add pumpkin puree, mayonnaise, Dijon mustard, lemon juice, smoked paprika, salt, and pepper to the yolks. Blend until smooth and well combined.
  6. Using a piping bag, fill the egg whites with the yolk mixture, careful not to overfill.
  7. Create decorative lines resembling a pumpkin on each egg white using the filling.
  8. Top each egg with a small piece of chive and a tiny piece of parsley to simulate a pumpkin stem.
  9. Serve immediately or refrigerate for up to 2 days.

Notes

You can adjust the amount of smoked paprika for more or less spice.
Fresh herbs add a nice touch for presentation, but can be omitted if desired.
These can be prepared a day in advance for easy entertaining.
