Description

This Pumpkin French Toast Casserole is a delightful blend of creamy pumpkin puree and spices, all soaked into cubed bread. It’s perfect for an easy brunch or cozy breakfast. With minimal prep and an irresistible flavor, this dish will become a family favorite for gatherings or peaceful mornings at home.

  • 1 (14 oz) day old french bread, cubed
  • 3 cups whole milk
  • 1 (15 oz) can pumpkin puree
  • 3/4 cup sugar
  • 1/2 cup brown sugar
  • 2 tsp vanilla
  • 2 tsp pumpkin pie spice
  • 6 eggs
  • 1/2 cup butter, cold & cubed
  • 1/2 cup brown sugar
  • 1/2 cup flour
  • 1 tsp pumpkin pie spice
  • 1 cup pecans, chopped, optional

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Spray a 9 x 13 inch pan with non-stick spray. Cube the bread and spread it evenly in the pan.
  3. In a large mixing bowl, whisk together the milk, pumpkin puree, sugar, brown sugar, vanilla, pumpkin pie spice, and eggs until fully combined.
  4. Pour the pumpkin mixture over the cubed bread, ensuring an even distribution. Use a fork to gently press the bread cubes into the mixture to soak them well.
  5. Cover the dish and refrigerate for a minimum of 3 hours, or overnight for best results.
  6. Before baking, prepare the streusel topping by combining cold, cubed butter, brown sugar, flour, and pumpkin pie spice in a food processor. Pulse until the mixture forms crumbs.
  7. Sprinkle the streusel topping evenly over the casserole. If desired, add chopped pecans on top of the streusel.
  8. Bake the casserole for 45-50 minutes, or until a toothpick inserted in the center comes out clean.

Notes

Letting the casserole sit in the refrigerator for a few hours allows the flavors to meld beautifully.
For a sweeter topping, add more sugar to the streusel mixture if desired.
Serve warm, and consider adding maple syrup or whipped cream for extra indulgence.
