Description

Ingredients

  • 2 1/2 cups Flour
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • 2 tsp Pumpkin Pie Spice
  • 3/4 cup Sugar
  • 3/4 cup Brown Sugar
  • 1 cup Pumpkin Puree
  • 1/2 cup Oil
  • 1 Egg
  • 1 1/2 tsp Vanilla
  • 4 oz Cream Cheese, Softened
  • 1/4 cup Butter, Softened
  • 2 tsp Vanilla
  • 2–3 cups Powdered Sugar

Instructions

  1. Preheat your oven to 350 degrees and line a baking sheet with parchment paper.
  2. In a small bowl, whisk together the flour, baking soda, baking powder, and pumpkin pie spice.
  3. In a large bowl, combine the sugar, brown sugar, pumpkin puree, and oil; beat until well mixed.
  4. Add the egg and vanilla to the mixture and blend well.
  5. Gradually incorporate the dry ingredients into the wet mixture until fully combined.
  6. Scoop about 1 1/2 tablespoons of dough onto the prepared baking sheet, leaving space between each for spreading.
  7. Bake the whoopie pies for 10 minutes, then allow them to sit on the baking sheet for a few minutes before moving to a cooling rack.
  8. For the filling, beat the softened cream cheese and butter together until smooth.
  9. Mix in the vanilla and 1 cup of powdered sugar, adding more until the filling reaches a spreadable consistency.
  10. To assemble, spread the filling onto the flat side of one cookie and top with another cookie to create a sandwich.

Notes

Allow the whoopie pies to cool completely before assembling to prevent the filling from melting.
Experiment with different spices or even add nuts for a unique touch. Use more or less powdered sugar for the filling to achieve desired sweetness.
Store in an airtight container to keep them fresh. They also freeze well.
