  • 1 cup butter, melted and slightly cooled
  • 1 cup granulated white sugar
  • 1 cup packed dark brown sugar
  • 4 large eggs, at room temperature
  • 1 tablespoon pure vanilla extract
  • 1 cup all-purpose flour
  • 1 cup Dutch-processed cocoa (or unsweetened cocoa powder)
  • 1 teaspoon espresso powder, optional
  • 1 teaspoon kosher salt
  • 1 1/4 cups chopped chocolate, divided
  • 3/4 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 1 1/4 cups powdered sugar
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon pure vanilla extract
  • 1 tablespoon heavy cream, or whole milk
  • 3 cups puppy chow

Instructions

  1. Preheat the oven to 350°F. Line a 9×13-inch baking pan with parchment paper and lightly grease it.
  2. In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth. Mix in the eggs and vanilla extract until well combined. Gradually add the flour, cocoa powder, espresso powder, and salt, stirring until just combined. Fold in 1 cup of the chopped chocolate.
  3. Pour the batter into the prepared pan and sprinkle the remaining ¼ cup chopped chocolate on top. Bake for 25 to 35 minutes, checking for doneness with a toothpick. Cool completely in the pan.
  4. For the peanut butter frosting, beat the peanut butter and butter together in a stand mixer until smooth. Add the powdered sugar, salt, vanilla extract, and heavy cream, and beat until light and fluffy.
  5. Spread the peanut butter frosting evenly over the cooled brownies.
  6. Sprinkle the puppy chow on top of the frosting, pressing gently to adhere.
  7. Cut the brownies into squares and serve.

Notes

Make sure the butter is melted and slightly cooled to prevent cooking the eggs during mixing.
Store extras in an airtight container for up to 3 days to maintain freshness.
Feel free to use crunchy peanut butter for extra texture.
