Description

These Red White and Blue Cheesecake Bars are a festive treat that combines creamy cheesecake with a delicious Oreo crust. Easy to make and perfect for gatherings, they are sure to impress with their vibrant colors and irresistible flavor.


Ingredients

  • 30 Oreo cookies
  • 4 tablespoons unsalted butter, melted
  • 38 ounce packages cream cheese, softened
  • 1 1/2 cups granulated sugar
  • 1/4 cup sour cream
  • 2 teaspoons vanilla extract
  • 1/4 cup all purpose flour
  • 3 large eggs
  • red gel food color
  • blue gel food color

Instructions

  1. Preheat the oven to 325°F and line a 9×13 pan with foil.
  2. In a food processor, crush the Oreo cookies (including the cream) until they form crumbs.
  3. Mix the melted butter into the crumbs until combined, and press this mixture evenly into the bottom of the prepared pan. Bake for 10 minutes and let cool.
  4. Place a large baking sheet on the bottom rack of the oven and fill it halfway with water. Preheat the oven again.
  5. In a bowl, beat the cream cheese and granulated sugar until creamy. Then add the sour cream, vanilla extract, and flour, mixing until well combined.
  6. Beat in the eggs gently until just mixed.
  7. Divide the batter into three bowls and use the gel food colors to tint two of the bowls red and blue.
  8. Spoon the colored mixture over the crust in alternating patterns. Use a butter knife to swirl the colors together gently without overmixing.
  9. Place the pan on the oven rack above the water-filled baking sheet and bake for 45-50 minutes. After baking, remove from the oven and let cool on a wire rack.
  10. Cool the cheesecake on the counter for 1 hour, then refrigerate for 4-6 hours before cutting into squares.
  11. Serve with whipped cream and sprinkles, if desired.

Notes

Ensure the cream cheese is softened for easy mixing.
Allow the cheesecake to set in the fridge for best results.
Feel free to add more food coloring for brighter colors.
