Description

This Sheet Pan Salmon is a delightful blend of flavors, featuring fresh salmon fillets, vibrant green beans, and juicy tomatoes, all tossed in a lemony marinade. Perfect for a quick, healthy dinner that doesn’t skimp on taste!


Ingredients

Scale
  • 4 salmon fillets
  • Salt and pepper
  • 3 tbsp olive oil
  • 2 garlic cloves, minced
  • Zest ½ lemon
  • Juice 1 lemon, approx. 2 tbsp
  • 1 ½ tsp oregano
  • 1 tsp paprika
  • 12 oz green beans, larger ones cut in half
  • 1 pint grape tomatoes, halved

Instructions

  1. Preheat the oven to 425°F and line a large baking sheet with parchment paper.
  2. In a small bowl, combine olive oil, minced garlic, lemon zest, lemon juice, oregano, and paprika.
  3. In a separate bowl, toss green beans with 1 tablespoon of the marinade, then spread them on the baking sheet and roast for 5 minutes.
  4. After 5 minutes, remove the baking sheet from the oven and add halved tomatoes, drizzling an additional tablespoon of marinade on them. Toss to combine.
  5. Push the vegetables to the sides and place the salmon fillets in the center of the baking sheet. Season with salt and pepper, then brush the remaining marinade over the top of the salmon.
  6. Return the baking sheet to the oven and bake for 10-12 minutes. Then, switch the oven to broil for another 2-3 minutes until the salmon is cooked through.
  7. Optional: Before serving, sprinkle with feta cheese and fresh herbs like parsley or dill.

Notes

Ensure the salmon is at room temperature before cooking for even cooking.
Feel free to substitute the vegetables with your favorite seasonal options.
Check the salmon for doneness; it should flake easily with a fork.
