- 5 cups peaches, sliced
- 1/2 cup sugar
- 2 tbsp cornstarch
- 1/2 tsp vanilla
- 1 tbsp lemon juice
- 1/2 cup flour
- 1/2 cup brown sugar

- 1/2 cup butter, cold & cubed
- 3/4 cup old-fashioned rolled oats
Instructions
- Preheat the oven to 350 degrees F and prepare a pie pan with non-stick spray.
- Pit, peel, and slice the peaches to fill 5 cups, then transfer them to a medium-sized bowl.
- Mix the peaches with sugar, cornstarch, vanilla, and lemon juice until well combined.
- Spread the peach mixture evenly in the prepared pie pan.
- In a food processor, combine flour, brown sugar, and cinnamon, then pulse together.
- Add in the cold, cubed butter and pulse until crumbly textures form.
- Gently mix in the old-fashioned rolled oats until just combined, then distribute the mixture over the peaches.
- Bake for 30-35 minutes or until the topping turns golden brown.
Notes
For added flavor, try using a mix of different peaches like yellow and white.
