Description

  • 1½ cups (300 g) granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 2 teaspoons vanilla
  • ½ teaspoon (0.5 teaspoon) almond extract
  • 2¾ cups (380 g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon (0.5 teaspoon) salt
  • 4 ounces (113.4 g) cream cheese, room temperature
  • 2 tablespoons salted butter
  • 1 teaspoon vanilla
  • pinch of salt
  • 1¾ cup (210 g) powdered sugar
  • fresh fruit for topping

Instructions

  1. Preheat your oven to 375°F and line two baking sheets with parchment paper.
  2. In a stand mixer, cream together the butter and granulated sugar on medium-high speed until light and fluffy, approximately 3 minutes.
  3. Add the egg, egg yolk, vanilla, and almond extract, mixing on low speed until well combined, about 30 seconds.
  4. Gradually mix in the baking soda, salt, and all-purpose flour until fully incorporated.
  5. Using a ¼ cup cookie scoop, place large balls of dough onto the prepared baking sheets, leaving space between each one.
  6. Bake the cookies for 11-14 minutes until the edges are lightly golden brown and the tops display some crackling, but do not overbake to keep them chewy.
  7. In a separate bowl, beat the cream cheese and salted butter together until smooth. Add vanilla, pinch of salt, and powdered sugar, mixing until creamy.
  8. Spread a layer of frosting on each cooled cookie and top with diced fresh fruit.

Notes

For a colorful presentation, use a variety of fruits like strawberries, blueberries, and kiwi.
Ensure the cookies are completely cooled before adding frosting to prevent melting.
