Description

This Sushi Bowl combines irresistible flavors with simple prep. Made with fresh ingredients, it’s a quick and healthy meal perfect for lunch or dinner!


Ingredients

  • 2 cups sushi rice rinsed until the water runs clear
  • 2 1/2 cups water
  • 1/4 cup rice vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon kosher salt
  • 1/2 cup mayonnaise
  • 1 1/2 tablespoons sriracha sauce
  • 1 garlic clove finely minced
  • 16 ounces imitation crab meat
  • 1 avocado cut into slices
  • 1 cup shelled edamame
  • 2 carrots peeled and cut into match sticks
  • 4 mini cucumbers sliced thin
  • .35 ounce roasted seaweed
  • 2 teaspoons sesame seeds

Instructions

  1. Bring the sushi rice and water to a boil in a small pot, then reduce to a simmer and cook for 20 minutes.
  2. While the rice is cooking, mix together the rice vinegar, sugar, and kosher salt until dissolved.
  3. Once the rice is cooked, mix the vinegar mixture into the rice thoroughly.

Notes

Make sure to rinse the sushi rice until the water runs clear for the best texture.
Adjust sriracha sauce to taste depending on your spice preference.
