- 1 cup granulated sugar
- 1 cup all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 4 ounces cream cheese (room temperature)
- 4 ounces mascarpone cheese (cold)
- 1 cup butter (room temperature)
- 5 cups powdered sugar
- 1 teaspoon pure vanilla extract
- 1/4 cup strongly brewed coffee or espresso
- 1/4 cup unsweetened cocoa powder (for garnish)
Instructions
- Preheat the oven to 350°F and grease three 6-inch round cake pans, lining the bottoms with parchment paper.
- In a stand mixer, beat the eggs on medium-high speed while gradually adding the granulated sugar until the batter reaches the 'ribbon stage'.
- Sift in the flour, baking powder, and cinnamon, gently folding them into the egg mixture.
- Divide the batter among the prepared pans and bake for 15-18 minutes or until a toothpick inserted comes out clean.
- Cool the cakes in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- Optional: Freeze the cooled cake layers for at least 4 hours for easier frosting.
- In a stand mixer, combine cream cheese, mascarpone, and butter, beating until smooth.
- Gradually add the powdered sugar, mixing on low speed and scraping down the bowl as necessary.
- Add vanilla extract and beat on high speed until frosting is fluffy.
- Brush the tops of the cooled cake layers with espresso.
- Assemble the cake by stacking layers with frosting in between each, finishing with frosting on top and sides.
- Decorate the top with remaining frosting using a piping bag, if desired, and sift cocoa powder over the top.
- Refrigerate for 4 hours before serving.
Notes
For firmer layers, it’s beneficial to freeze the cakes before assembly.
Make sure the eggs are at room temperature for the best volume when beaten.
