Ingredients

  • 6 large eggs (room temperature)
  • 1 cup granulated sugar
  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 4 ounces cream cheese (room temperature)
  • 4 ounces mascarpone cheese (cold)
  • 1 cup butter (room temperature)
  • 5 cups powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1/4 cup strongly brewed coffee or espresso
  • 1/4 cup unsweetened cocoa powder (for garnish)

Instructions

  1. Preheat the oven to 350°F and grease three 6-inch round cake pans, lining the bottoms with parchment paper.
  2. In a stand mixer, beat the eggs on medium-high speed while gradually adding the granulated sugar until the batter reaches the 'ribbon stage'.
  3. Sift in the flour, baking powder, and cinnamon, gently folding them into the egg mixture.
  4. Divide the batter among the prepared pans and bake for 15-18 minutes or until a toothpick inserted comes out clean.
  5. Cool the cakes in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  6. Optional: Freeze the cooled cake layers for at least 4 hours for easier frosting.
  7. In a stand mixer, combine cream cheese, mascarpone, and butter, beating until smooth.
  8. Gradually add the powdered sugar, mixing on low speed and scraping down the bowl as necessary.
  9. Add vanilla extract and beat on high speed until frosting is fluffy.
  10. Brush the tops of the cooled cake layers with espresso.
  11. Assemble the cake by stacking layers with frosting in between each, finishing with frosting on top and sides.
  12. Decorate the top with remaining frosting using a piping bag, if desired, and sift cocoa powder over the top.
  13. Refrigerate for 4 hours before serving.

Notes

For firmer layers, it’s beneficial to freeze the cakes before assembly.
Make sure the eggs are at room temperature for the best volume when beaten.
