Ingredients

  • 1 pound cherry tomatoes
  • 8 ounces fresh mozzarella
  • 3 cloves garlic
  • 1 large lemon
  • 1/3 cup extra virgin olive oil
  • 1 teaspoon dried oregano
  • 1/2 cup fresh basil leaves
  • salt and pepper
  • 16 ounces spaghetti noodles
  • freshly grated parmigiano reggiano or pecorino romano
  • extra-virgin olive oil

Instructions

  1. Combine halved cherry tomatoes, mozzarella, and garlic in a large bowl.
  2. Stir in lemon zest, lemon juice, olive oil, dried oregano, and season with salt and pepper. Marinate for a while.
  3. Boil water in a large pot and add salt. Cook spaghetti as instructed on the package until al dente. Reserve ½ cup of pasta water before draining.
  4. Drain spaghetti and add it to the bowl with the sauce. Toss everything together with pasta water until well coated.
  5. Tear fresh basil over the top and gently fold in. Adjust seasoning to taste and serve with grated cheese and a drizzle of olive oil.

Notes

Let the tomato and mozzarella mixture marinate for at least 15-30 minutes for the best flavor.
Use good quality extra virgin olive oil for drizzling at the end to enhance the dish.
