Description
This Tomato Miso Soup with Garlic Sesame Mushrooms offers a delightful balance of flavors with tender mushrooms and fresh veggies. Ideal for a quick dinner or a comforting meal, it’s both nourishing and simple to prepare.

- 8 oz shiitake mushrooms, stems removed and thinly sliced
- 1 tbsp sesame seeds
- 2 tbsp avocado oil
- 1 tsp garlic powder
- 1/2 tsp onion powder
- Juice of half a lemon
- 1 cup cherry tomatoes, halved
- 3 scallions, thinly sliced, whites and green portions separated
- 1 ear of corn, kernels cut away from the cob
- 4 cups hot water
- 2 dry shiitake mushrooms
- 2–3 tbsp yellow miso paste
- 11 oz soft tofu, sliced into rounds or cubed
- Sesame oil, for serving (optional)
- Cooked rice, for serving (optional)
Instructions
- Preheat the oven to 425°F. Combine the mushrooms, sesame seeds, garlic powder, onion powder, 1 tablespoon of avocado oil, and a pinch of salt in a bowl. Toss well and spread in a single layer on a baking sheet. Bake for 15 minutes, stir, and bake for another 5-10 minutes until browned. Squeeze lemon juice over the mushrooms once out of the oven.
- In a large saucepan, heat the remaining tablespoon of oil over medium-low heat. Add the halved cherry tomatoes with a pinch of salt and sauté for about 5 minutes until they soften and release their juices.
- Add the sliced scallions and corn. Sauté for an additional 2-3 minutes until well incorporated with the tomatoes.
- Pour in 3 1/2 cups of hot water and add the dried shiitake mushrooms. Stir and bring to a boil before reducing the heat to a low simmer for 10 minutes.
- Carefully add the sliced tofu to the broth and simmer for 3-5 minutes until warmed through.
- In a small bowl, whisk miso paste with the remaining 1/2 cup water until smooth. Remove the cooked dried mushrooms from the soup, then stir in the miso mixture. Adjust seasoning with salt or additional miso as needed.
- Serve the soup in bowls, topped with roasted mushrooms and a drizzle of sesame oil. Enjoy with cooked rice on the side, if desired.
Notes
Feel free to substitute with other mushrooms if shiitake is not available.
Adjust the amount of miso paste based on personal taste preference for saltiness.
