- 4 cups cubed watermelon
- ¼ red onion – thinly sliced
- 1 cup feta cheese
- ½ cup cherry tomatoes
- ¼ teaspoon salt
- ¼ teaspoon pepper
- ¼ cup balsamic vinegar
- ½ cup extra virgin olive oil
- 1 tablespoon dijon mustard
- 1 teaspoon honey
- 1 large clove garlic (grated)
Instructions
- Wash and dry the spinach, then place it in a large bowl or on a platter.
- Add the cubed watermelon, cherry tomatoes, sliced red onion, and feta cheese on top.
- Sprinkle with salt and pepper to taste.
- In a separate bowl, whisk together the balsamic vinegar, olive oil, dijon mustard, honey, garlic, and season with salt and pepper.
- Drizzle the dressing over the salad and gently toss to combine.
- Serve immediately.
