Description

Ingredients

  • 6 cups washed baby spinach
  • 4 cups cubed watermelon
  • ¼ red onion – thinly sliced
  • 1 cup feta cheese
  • ½ cup cherry tomatoes
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ cup balsamic vinegar
  • ½ cup extra virgin olive oil
  • 1 tablespoon dijon mustard
  • 1 teaspoon honey
  • 1 large clove garlic (grated)

Instructions

  1. Wash and dry the spinach, then place it in a large bowl or on a platter.
  2. Add the cubed watermelon, cherry tomatoes, sliced red onion, and feta cheese on top.
  3. Sprinkle with salt and pepper to taste.
  4. In a separate bowl, whisk together the balsamic vinegar, olive oil, dijon mustard, honey, garlic, and season with salt and pepper.
  5. Drizzle the dressing over the salad and gently toss to combine.
  6. Serve immediately.

Notes

For added crunch, include toasted nuts or seeds.
You can substitute feta cheese with goat cheese for a different flavor.
