These Zucchini Fritters are packed with flavor and easy to make! Perfect for a quick dinner or a healthy snack, they’re made with fresh zucchini, eggs, and cheese for a satisfying bite.

- 3 tbsp avocado, canola, or vegetable oil for cooking
- 2 cups shredded zucchini – squeezed (2 large zucchini, around 1.5 lbs)
- 1 cup panko bread crumbs
- 2 eggs
- 1/3 cup fresh grated parmesan cheese
- 1/4 cup finely shredded mozzarella cheese
- 2 garlic cloves
- 1 tsp salt
- 1 tsp fresh cracked black pepper
Instructions
- Grate the zucchini using a box grater with larger holes and place the grated zucchini into a mesh bag or cheese cloth. Squeeze out as much liquid as possible.
- Combine the squeezed zucchini with the remaining ingredients in a mixing bowl and mix well until fully combined.
- Preheat a large pan over medium heat. Add oil and use a scoop to portion the zucchini mixture, shaping it into fritters with your hands before placing them in the pan.
- Cook fritters for 4-6 minutes on each side until golden brown, being careful not to disturb them until it's time to flip.
- If cooking multiple batches, add more oil to the pan as needed.
Notes
Squeeze out as much moisture from the zucchini as possible before mixing.
Cook on medium to medium-low heat to ensure the inside cooks thoroughly without burning the outside.
If necessary, adjust oil levels between batches for even cooking.
